PB&J Overnight Oats in a Jar

Don’t you love waking up and having breakfast already taken care of?

I wake up hungry just about every day, so I don’t take this lightly. When it comes to breakfast, I try to choose a balance of fiber, protein, and healthy fat to keep me feeling full throughout the morning. These portable (& pretty!) overnight oats check off all the boxes, and are perfect for throwing in your bag on busy weekday mornings.


This is a perfect breakfast to toss in your work bag and eat on the go. I use these jars and love how the tight seal ensures your oatmeal won’t leak all over. Don’t forget to pack your spoon!


Both quick oats and old fashioned rolled oats work in this recipe. If you are looking to make and eat your oats within a few hours, I recommend using quick oats because they will absorb liquid faster. If you’re making them and refrigerating them overnight, either quick or old fashioned oats should work just the same.


PB&J Overnight Oats in a Jar

Makes 1 serving (1 jar)

1/2 C organic quick oats
1/2 T chia seeds
2/3 C milk of choice
1 t agave or honey
2 T creamy peanut butter or nut/seed butter of choice
2 T jam or jelly

Method:

Combine quick oats, chia seeds, milk, and agave or honey in a sterilized jar. Stir and cover with lid, and let thicken in refrigerator for at least two hours or overnight.

Once thickened, top with peanut butter, jam or jelly, and any other toppings you prefer. I used dehydrated coconut flakes. Enjoy!
