Pecan Pie Energy Bites

I can’t believe it’s almost the end of February! This month has flown by, thank goodness, because that means Spring is right around the corner. You know what the end of February also means? Girl Scout Cookies. I am waiting for our neighbor to deliver them any minute now.

In preparation for said Girl Scout Cookie delivery, I whipped up a batch of healthy, fiber-packed energy bites in hopes that they’ll help me practice some self restraint. These energy bites taste just like Lara Bar’s pecan pie flavor, and all it takes is 4 simple ingredients!

I use a combination of pecans and almonds in this recipe, but you can use all pecans if you prefer. No need to spend extra money pecan halves- pieces work just fine in this because you are processing them anyways.

Feel free to add a tablespoon of flax or chia seeds to your energy bites! If you find that this makes them a bit too dry to roll into balls, add another date or two.

Pecan Pie Energy Bites

Prep time: 15 mins Active time: 5 minutes Total time: 20 minutes

Special equipment needed: food processor

Makes 10-12 energy bites

1 C pitted dates
1 C pecans
1/2 C almonds
1 t pure vanilla extract
1/2 t sea salt

Method:

If the dates you have aren’t soft, soak them in hot water for 15 minutes.

Toast pecans and almonds in 350° oven for five minutes then set aside.

Add dates to food processor and pulse until chopped into small pieces. Add toasted nuts, vanilla extract, and sea salt and process until combined and clumping together. Form into balls using small dough scoop (about 2 T per ball), rolling together with clean hands until round.

Store in airtight container in fridge for up to a week or in freezer for up to 4 months. Enjoy!
